fix: remove resource limits and use host.docker.internal for dashboard

- Remove CPU/memory limits that were causing issues
- Switch from docker-socket-proxy to host.docker.internal
- Add nas.jimmygan.com:8443 to WEBAUTHN_ORIGINS for proper auth
